Orange-Carrot Spice Muffin

These muffins are based on the Carrot Spice Muffin recipe from my favourite blog, the Fat Free Vegan Kitchen.

I added orange rind and used freshly squeezed orange juice as a substitute for the ¼ c of water. Instead of sugar and agave, I included c dried pineapple and c dried cherries, in addition to c dried raisins and about five drops of Stevia extract. Additionally, I used spelt flour instead of whole wheat flour. The carrot stars were soaked in orange juice.

The final product was quite delicious!
