I got a little tired of eating steel cut oats for breakfast every day, so on Monday I decided to make a vegan classic instead:

Scrambled tofu! In addition to the basic combination of mashed up tofu, onion, dill and spices, I added baby spinach, orange pepper, white mushrooms, and cocktail tomatoes.
There is quite an abundance of scrambled tofu recipes on the internet, in case you have yet to try this delicious standard! Here are a few examples:

The only tofu scramble I’ve had was at a restaurant, how sad! I need to make one for myself once and for all! I love all of the ingredients you mixed in yours, so I might just have to follow this recipe!

I just made my 1st tofu scramble the other day too, and got it out of my Vegan with a Vengeance cookbook and made my own variations! It was GREAT and I don’t know why I’ve waited so long to try one. It’s about as versitile as a stir-fry!

Tofu scrambles are just so great! I could never get tired of them, and they are a great way to have a healthy meal when you didn’t have anything else planned! And that link is great – such a sad state of affairs…

I don’t know, yours look great, but I’m pretty sure I’m going to screw up if I try it. So I have decided I will have my first scrambled tofu prepared by someone who nows what he’s doing. Now I only have to find this someone! :-)
